Roasted Salmon with Lemon and Dill

  1. Pre-heat the oven to 400 f (200 c).
  2. On an oven tray, assemble one layer of lemon wheels. Place the salmon on top of the lemon wheels. Arrange the dill on top of the fish and then place another layer of lemon wheels over the dill. Drizzle the olive oil over the top and then season generously with salt and pepper.
  3. Bake for 10 minutes. Remove the salmon and cut into serving sized portions. The salmon goes perfectly with mashed potatoes and roasted asparagus with garlic.
