Romanian Meatball Soup
Prepare your meatballs first. Then prepare the soup vegetables and start making the soup. Towards the end, add the meatballs, and when they float to the top, your Romanian meatball soup will be ready.

Ingredients
Meatballs
- 1lb beef, ground (minced)or ground pork or a combination
- 1 eggs
- 1small onionsfinely chopped
- 1/2tsp salt, ground sea
- 1/2tsp black pepper, ground
- 1/4cup breadcrumbs
- 2tbsp riceuncooked
- 1tbsp parsleyfinely chopped
Soup
- 2tbsp olive oil
- 5ribs celeryfinely chopped, reserve leaves for garnish
- 2 tomatoeschopped
- 1 onionsfinely chopped
- 1 bell peppers (capsicums), greenfinely chopped
- 2 carrotsfinely chopped
- 1tsp salt, ground sea
- 1tsp black pepper, ground
- 1quart chicken stockor vegetable stock
- 1quart water
- 2tbsp tomato paste
- 1 lemonsjuice only
Garnish
- 2tbsp sour creamopional
- 4tbsp celery, leavesfinely chopped, or parsley
Instructions
- Prepare your meatballs first. Combine all meatball ingredients well. Using wet hands, form into small meatballs (about half the size of a golf ball).
- When you chop the the vegetables for the soup, remember to rinse and reserve the celery leaves for a garnish. Heat the olive oil in a heavy-based saucepan over a moderate heat. Add all of the chopped vegetables and stir well to combine. Season with the salt and pepper. Continue to stir occasionally and after 5 minutes add the tomato paste. Stir to combine and then add the chicken or vegetable stock and the water. Bring to a boil and then turn the heat down and simmer for 20 minutes.
- Add the prepared meatballs. When they float to the top they will be cooked. Check for seasoning and add the lemon juice and some of the chopped parsley leaves, if you are using them. Stir to combine for about 1 minute.
- Serve into bowls and garnish with remaining chopped, celery leaves, or parsley, and a small dollop of sour cream if using.
