How to Make Easy Carrot, Orange and Ginger Soup
An easy soup to make featuring the flavors of Morocco. You need to be able to puree the soup with a stick blender or a food processor. You can serve this soup hot or warm. You can also prepare the soup to the blended stage and refrigerate for later re-heating, adding the garnish just before serving.

  1. In a heavy based saucepan, heat the olive oil over a moderate heat. Add the onions, stir and cook for 3 minutes or until the onions begin to sweat. Add the garlic and ginger, stir and cook for a further 2 minutes. Add the pepper, salt, coriander, cumin and orange zest, stir and cook for a further 2 minutes.
  2. Add the carrots, orange juice and chicken stock. Bring to a boil and then allow to simmer for 30 minutes or until the carrots are tender.
  3. Remove the saucepan from the heat and stir in the honey to incorporate into the soup. Then use a stick blender to puree the soup. Alternatively, ladle batches into a food processor.
  4. Gently re-heat the blended soup if necessary and test for seasoning. Ladle into serving bowls and garnish with the allspice, cilantro and yogurt.
